Process of elaboration
Artisanal methods and modern technology are combined . Grapes are carefully hand-harvested and once at the winery they are de-stemmed and go directly to the pneumatic press to be crushed in cold at low pressure and temperature. Later on, the obtained must is decanted in order to eliminate the various impurities. Fermentation is the next step in this process. It is conducted in our stainless steel tanks using native yeasts (they come from our own grapes, from the yeast settled to the bottom of the tank) where they ferment naturally. We are able to reduce the acid in the wine in a biological manner thanks to partial malolactic fermentation (depending on the vintage), which transforms the malic acid into the less aggressive lactic acid. Finally, the wine is stabilized in our isothermal stainless steel tanks with cold equipment for refrigeration.
One aspect to be mentioned is that traceability is followed during the whole process, making easy the monitoring of the distribution chain at any time. It must be highlighted that our vineyards, 6 hectares of our own and the rest under control, are treated with environmentally friendly phytosanitary products. Furthermore, to fertilize the vineyards and to prevent the weeds growth we use animals and chemical products are never used.
We can assert that the vineyard and land quality, the microclimate, the passion of our personnel, and the exhaustive controls carried out during the whole process, make possible to achieve a personalized, sweet and voluptuous wine with a touch of fragrance which makes it a pleasure to the palate.
